Tabula Praenestina: a return focused on school, territory and sustainability

The 15th edition of Tabula Praenestina was held on 15 April 2026 at the Rosario Livatino Hospitality Institute in Cave. Revived after a pause, the event—born from the initiative of Prof. Giancarlo Tomassi—reconnected hospitality schools, local producers and sustainability issues in practical educational activities.

Students and teachers from hospitality institutes across Lazio engaged in contests, workshops and presentations where seasonal ingredients, short supply chains and waste reduction were turned into concrete practices as well as cultural values.

• Participants: IIS M. Pantaleoni / M. Buonarroti (Frascati), IPSSEOA Ugo Tognazzi (Velletri), IPSSEOA Palombara Sabina, IPSSEOA R.A. Costaggini (Rieti) and other Lazio institutes.
• Highlights: theme “Sustainability at the table”, valorizzation of local supply chains, a silk production focus by TecnoSeta and a Fashion & Design student runway show.
• Juries: mixed panels of teachers and professionals (chefs, sommeliers, maîtres, bartenders, tourism hospitality experts).
