Sensory Landscape: a sensory journey at Palazzo Bovara

Palazzo Bovara in Milan hosted an installation focused on the five senses. Sensory Landscape, curated by Elle Decor Italy and designed by architect Piero Lissoni, offers an immersive path combining design, nature and art.

The project unfolds across the piano nobile and the courtyard, where landscaper Antonio Perazzi created a "sincere garden" that interacts with the historic architecture. Lissoni’s approach relies on subtraction: essential materials and measured proportions create a visual silence in which perception regains prominence.

The installation includes impactful works from the Marco Bertoli gallery collection, spanning different periods. The experience is further enriched by sound compositions and digital projections, designed to heighten sensory engagement.

The temporary restaurant as part of the artwork

Within the show, ALMA – The International School of Italian Cuisine set up a temporary restaurant that translates the five-sense theme into a tasting menu by chef Federico Vigilante. The culinary concept acts as a design element: each course is conceived to highlight different perceptual qualities.

  • Hearing: dishes featuring crunchy elements that underline the acoustic aspect of eating.
  • Touch: preparations intended to be eaten by hand, emphasizing textures and temperatures.
  • Smell: recipes based on fermentation and persistent aromatic layers.
  • Sight: restrained chromatic choices to focus perception.
  • Taste: savory combinations that aim for gustatory completeness.

The gastronomic journey was paired with selected champagnes and ended with a dessert designed for personal composition, alongside the contemporary Torta Bella® by pastry master Andrea Tortora.
