Palazzo Saluzzo Paesana welcomes an edition of the Dialoghi Metropolitani series: a show-conference focused on the recent UNESCO recognition of Italian cuisine as Intangible Cultural Heritage and on the implications of Piemonte hosting the seat of Gault&Millau Italy. The event frames cuisine as a complex cultural asset made of rituals, social conviviality, transmitted knowledge and the enhancement of local ingredients.
