In Roseto degli Abruzzi, there is a place where the boundary between dining room and kitchen dissolves, leaving space for a single stage: the chef’s counter. Retroscena is the first chef’s table in Abruzzo, a restaurant that transforms dinner into a live performance, where the aromas, sounds, and gestures of the chef become part of the experience.

Sitting here means facing Richard Abou Zaki, a conductor armed with knives and spices, who leads his brigade with precise movements and an ever-watchful eye on the guests. The cuisine is a mosaic of flavors: oriental influences intertwine with Italian tradition, local ingredients are embraced by sauces scented with ginger or miso, and each dish arrives like a small work of art.

The beauty of Retroscena is that you feel part of something, even if you come alone. The enveloping counter creates a natural closeness, the clinking of pots blends with the murmur of conversations, and the chef never fails to explain, smile, and share the story behind each creation.

Among the offerings, one dish stands out as a signature: duck with spiced jus and seasonal vegetables. The crispy skin releases a warm, enveloping aroma, the jus adds an exotic note that dances on the palate, while the vegetables bring freshness and color, balancing every bite.
